© CORTIJO LOS AGUILARES

The Serranía de Ronda is a depression located at high altitude two natural parks – the Sierra de las Nieves and Grazalema – very close to the Atlantic and the Mediterranean, with impressive geological formations and unique natural resources.

Apart from vine-growing, the 800-hectare estate possesses an olive grove, and a large area of “dehesa” for acorn-fed Iberian pig farming. The main building of the Cortijo is from the end of the 19th century, but the remnants from the Arabic and Roman period found onsite are a proof an agriculture settlement has been there for over 2000 years.
The holm oak and the cork oak are particularly representative of the region, as part of the “dehesa” farming system, along with pine, almond tree, gall oak and fig tree. Aromatic herbs - such as sage, pennyroyal, rosemary, lavender – are also a key component of the Mediterranean mountain, along with a wide range of wild flowers: white mustard, poppy, narcissus, and cistus. All of them play an important role in the rich aromatic expression of the wine.
