RESPECT FOR THE TERROIR AND THE COMBINATION OF TRADITION WITH THE MOST ADVANCED TECHNOLOGY LIE AT THE HEART OF OUR WINEMAKING PHILOSOPHY.

The grapes are all from our own harvest and are hand-picked in small boxes, at the first light of day. They will spend the first 24 hours in a cold room (2ºC) to minimize the use of sulphites and protect them from oxidation.
Grape varieties will be vinified separately; fermentation will occur in stainless steel and concrete tanks, following a process of “gravity-flow” winemaking in order to get the greatest aromatic expression.
The wine is aged exclusively in fine grain French oak barrels which we only use 4 or 5 years. Since 2015, ageing in clay amphora is also experimented for the creation of new wines.
